Walmart Rotisserie Chicken with Bowtie Pasta, Tomato and Parmesan Snow

Serves 4


1 ea Walmart rotisserie chicken

1 ea 1 pound box of bowtie pasta (also called farfalle pasta)

2 ea 24 oz jar of pasta sauce

1 ea 5 oz box of baby spinach

6 ea medium basil leaves, torn into pieces

2 Tbsp flat leaf parsley, roughly chopped

1/3 C parmesan cheese, grated with fine grater

extra virgin olive oil

sea or kosher salt

freshly ground black pepper


1-    Bring a large pot of water to a boil.

2-    Add pasta sauce to a small to medium pot and heat to a light simmer.

3-    While the water and sauce heat, place the chicken on a clean cutting board, remove the skin and discard.  Pull and cut off as much meat as possible and chop the meat into bite sized pieces and reserve.  (The remaining chicken bones can be save to make soup) 

4-    When the water reaches boil point, add enough salt so it tastes as salty as the ocean.  Add the pasta to the water and give it a stir to avoid sticking together.  Cook the pasta for 7-8 minutes.  The pasta should be tender and just cooked through, without being mushy.  Drain the pasta in the sink through a colander.  Immediately return the pasta back into the pot and add the chicken, hot pasta sauce, spinach and drizzle with extra virgin olive oil.  Mix together well.

5-    Transfer into a large bowl or dish, top with the basil and parsley, sprinkle on the parmesan snow and finish with freshly ground black pepper
